Cornbread has been a tradition in households for centuries and many swear by their family recipe, but you may not know how these recipes have evolved differently in the North and the South. In much of the South, there is a preference for an unsweetened, crumbly textured version while cornbread in the north has evolved to be lighter with some sugar.
Our sweet, fluffy muffins take their inspiration from the northern evolution of the corn muffin. The earliest cornbread recipes were as simple as cornmeal, water, cooking fat, and possibly salt. Over the years as ingredients and tastes have changed, it has become more and more common to add ingredients like eggs, buttermilk, sugar, and more.
What makes the BLACKBARN cornbread unique and special is that in the bakery nestled inside our kitchen, our talented pastry chef Anwuli prepares her recipe that doubles down on the sweetness by topping the small treats with delightful honey butter. For the first time, she is sharing her recipe.

1 lb butter
1 lb honey
Place your butter and honey in a pot and bring to a boil. Then turn down the temperature and allow for it to simmer for 5 minutes before you pour them onto the hot muffins. (n.b. it is very important to use high-quality honey, local if possible. Many large brands use mostly corn syrup for their honey instead of pure honey.)
